FOOD SERVICE AND DELIVERY

AI employee for restaurants and delivery

From 19:00 to 21:00 the line is busy: the guest hears ringing tones and orders from the delivery next door. When operators can’t keep up, the AI employee picks up, takes the order and sends a ticket to the kitchen.

INDUSTRY PAIN

Where does a delivery business lose orders?

Two operators hold the line all evening, until calls outnumber hands. Everything above that is ringing tones and guests calling the place next door.

Friday eveningincoming calls per half hour · 17:00–23:00

Ringing tones only from 19:00 to 21:00, the two busiest hoursFor the rest of the evening two operators keep up

Illustration, not a measurement: a Friday at a delivery with two operatorsFriday evening from 17:00 to 23:00, calls per half hour. Two operators take up to 20 calls per half hour. From 19:00 to 21:00 there are more calls: some guests hear ringing tones, some hang up. The rest of the time the line keeps up.

FULL CYCLE

How does the AI drive an order from the call to delivery?

An AI employee for delivery is an AI platform that takes orders by phone and in chat and carries them to the kitchen and the courier. A manager steps in where a human decision is needed.

  1. Call

If operators are busy, the AI picks up

  2. Menu and modifiers

Checks dishes against the stop list, confirms extras

  3. Address and zone

Checks the district and quotes delivery

  4. Payment

Cash to the courier or a Click link by text

  5. Kitchen ticket

The order lands in iiko or R_keeper, no retyping

  6. Delivery status

The guest gets texts: cooking, on the way, at the door

One route for calls, Telegram and the website; only the channel changes

Six steps: a call the AI picks up, menu and modifiers checked against the stop list, address and delivery zone, payment, a kitchen ticket in the back-office system, delivery status by text.

DIVISION OF LABOUR

What does the AI do and what stays with the team?

The AI takes the phone at peak hour and the questions that repeat all evening. The kitchen cooks, the manager settles disputes.

The AI does it

  • Takes calls when the line is busy
  • Takes orders with modifiers
  • Answers on menu, prices and zones
  • Sends the ticket to the kitchen
  • Answers «where is my order?» from the status

Kitchen and manager

  • A complaint about a dish and compensation
  • Banquets and large group orders
  • Stop list: what the kitchen ran out of
  • A late courier or a disputed delivery

Handed over with the call recording: the manager never asks the guest twice

PEAK HOUR

Every ringing tone at peak hour is an order that went next door

A hungry guest doesn’t call back: they open the delivery next door. The order goes to whoever picks up first.

The same call at 20:06, every operator busy. If the guest hears 40 seconds of ringing, they hang up and three minutes later order from the delivery next door. If the AI employee picks up after 15 seconds, the order is in the kitchen by 20:08.
  • Picks up when every operator is busy
  • Speaks Uzbek, Russian and English
  • Reads the order back before it hits the kitchen
  • Hands complaints to a manager with the recording

TYPICAL SCENARIO

Friday, 19:30, both operators on the line. The AI employee takes the third call, and the order goes to the kitchen. The manager greets guests on the floor instead of holding a phone.

QUESTIONS

Frequently asked

Can the AI take an order by phone?

Yes. The Zukko.AI AI employee sits as the last step in your telephony: the call goes to your operators first, and if nobody answers within the seconds you set, the AI picks up. It confirms dishes, modifiers like «no onion», the address and the time, states the total and reads the order back. The Voice AI module is added to the Pro plan and billed per minute.

Does the AI integrate with iiko or R_keeper?

Yes, it is a ready-made integration. The menu, prices and stop list come from iiko or R_keeper, so the AI answers from current data. An accepted order reaches the kitchen as a ticket with no retyping, and the guest’s order status comes from the same place. Other back-office systems connect over an API. You don’t need to change your till or number.

Where does the AI take the menu, prices and delivery zones from?

From your own data. You upload the menu with prices in UZS, modifiers, the stop list and delivery zones across Tashkent districts at launch, or pull them from your back-office system. If a dish is on the stop list, the AI offers a substitute instead of selling what has run out. If an address is outside the zone, it says so right away, before payment.

What happens after the order is dispatched?

The AI answers «where is my order?», «how long will it take?» and «can I change the address?» from the status in your back-office system, in the same channel. The guest gets a text with a status link, and the line stays open for new orders. If the guest is unhappy, the AI passes the conversation to a manager with the recording and the reason. Repeat-order reminders start on the Business plan.

Which channels and languages does the AI employee work in?

Zukko.AI brings phone, Telegram, Instagram Direct, post comments, WhatsApp and website chat into one window. Each guest has one card with the address and past orders, so operators never hunt for a chat. The AI speaks and writes Uzbek, Russian and English and switches language to follow the guest.

How long does rollout take for a delivery business?

A basic Zukko.AI launch takes from 2 hours and needs no integrator. You upload the menu and delivery zones, connect Telegram and Instagram, set the rules for replies and handing over to a manager, and the AI starts taking orders. Call pick-up is set up once Voice AI is added. Only an integration with iiko or R_keeper takes up to 30 days.
